Le lait de truie, \u00e0 l\u2019exception du colostrum, contient environ 40 % de mati\u00e8res grasses sur la base de la mati\u00e8re s\u00e8che (voir Figure 1). Les mati\u00e8res grasses constituent donc pour les porcelets sous la truie une source d\u2019\u00e9nergie tr\u00e8s importante qui les rend capables de dig\u00e9rer les mati\u00e8res grasses du lait de truie de mani\u00e8re efficace (\u2248 95 %). Pour faciliter le passage du lait de truie \u00e0 l\u2019alimentation solide, les mati\u00e8res grasses restent un \u00e9l\u00e9ment important de l\u2019alimentation de sevrage. Pour favoriser au maximum les performances des porcelets, il est donc important de rendre les mati\u00e8res grasses non seulement tr\u00e8s go\u00fbteuses, mais aussi tr\u00e8s digestes pour les porcelets. En effet, en l\u2019absence d\u2019une bonne digestibilit\u00e9, une teneur \u00e9lev\u00e9e en mati\u00e8res grasses entra\u00eene une r\u00e9duction de la consommation d\u2019aliments et, indirectement, un risque accru de probl\u00e8mes intestinaux.<\/p>\n<\/section>\n\n<section class=\"section section--gutenberg section--gutenberg-nomargin wp-block-image\"><div class=\"container\"><div class=\"columns\"><div class=\"column\">\n<figure class=\"wp-block-image is-resized\"><img decoding=\"async\" src=\"https:\/\/www.nuscience.eu\/globalassets\/agrifirm-group\/nuscience-en\/site-specific\/article_stimulating_digestibility1.png\" alt=\"\" style=\"width:383px;height:304px\"\/><figcaption class=\"wp-element-caption\">Figure 1 : Principaux composants du lait de truie (Zhang et al., 2018)<\/figcaption><\/figure>\n<\/div><\/div><\/div><\/section>\n\n<section class=\"section section--gutenberg section--gutenberg-nomargin wp-block-heading\">\n<h2 class=\"wp-block-heading\"><span style=\"color: #3A261B\" class=\"text-color\">Digestion des mati\u00e8res grasses<\/span><\/h2>\n<\/section>\n\n<section class=\"section section--gutenberg section--gutenberg-nomargin wp-block-paragraph\">\n<p>Apr\u00e8s l\u2019ingestion des aliments, les mati\u00e8res grasses passent, via l\u2019estomac, dans l\u2019intestin gr\u00eale. Avant que ces mati\u00e8res grasses non polaires puissent \u00eatre absorb\u00e9es par le contenu aqueux et polaire de l\u2019intestin gr\u00eale, elles doivent d\u2019abord \u00eatre \u00e9mulsionn\u00e9es. Cette \u00e9mulsification naturelle est r\u00e9alis\u00e9e par les sels biliaires qui sont produits par le foie et s\u00e9cr\u00e9t\u00e9s dans l\u2019intestin gr\u00eale. Les sels biliaires sont constitu\u00e9s d\u2019acide biliaire conjugu\u00e9 \u00e0 de la glycine ou de la taurine et vont diviser les mati\u00e8res grasses en plus petites particules, augmentant ainsi la surface de contact totale pour les enzymes digestives (voir Figure).&nbsp;<\/p>\n<\/section>\n\n<section class=\"section section--gutenberg section--gutenberg-nomargin wp-block-paragraph\">\n<p>Dans la deuxi\u00e8me \u00e9tape, les particules de graisse (triglyc\u00e9rides) sont d\u00e9compos\u00e9es en monoglyc\u00e9rides et en acides gras libres par l\u2019enzyme lipase, produite par le pancr\u00e9as. Ensuite, les diff\u00e9rents composants des mati\u00e8res grasses sont entour\u00e9s de sels biliaires et de monoglyc\u00e9rides pour former des micelles. Le contenu de ces micelles peut \u00eatre absorb\u00e9 par les microvillosit\u00e9s de l\u2019intestin gr\u00eale.&nbsp;<\/p>\n<\/section>\n\n<section class=\"section section--gutenberg section--gutenberg-nomargin wp-block-paragraph\">\n<p>L\u2019efficacit\u00e9 de cette digestion des mati\u00e8res grasses d\u00e9pend de diff\u00e9rents facteurs&nbsp;: la composition en acides gras, la qualit\u00e9 des sources de graisses et l\u2019\u00e2ge de l\u2019animal.<\/p>\n<\/section>\n\n<section class=\"section section--gutenberg section--gutenberg-nomargin wp-block-image\"><div class=\"container\"><div class=\"columns\"><div class=\"column\">\n<figure class=\"wp-block-image is-resized\"><img decoding=\"async\" src=\"https:\/\/www.nuscience.eu\/globalassets\/agrifirm-group\/nuscience-en\/site-specific\/article_stimulating_digestibility2.png\" alt=\"\" style=\"width:394px;height:264px\"\/><figcaption class=\"wp-element-caption\">Figure : Division des mati\u00e8res grasses en plus petites particules de graisse par les sels biliaires<\/figcaption><\/figure>\n<\/div><\/div><\/div><\/section>\n\n<section class=\"section section--gutenberg section--gutenberg-nomargin wp-block-heading\">\n<h2 class=\"wp-block-heading\"><span style=\"color: #3A261B\" class=\"text-color\">Facteurs affectant la digestibilit\u00e9<\/span><\/h2>\n<\/section>\n\n<section class=\"section section--gutenberg section--gutenberg-nomargin wp-block-heading\">\n<h3 class=\"wp-block-heading\"><span style=\"color: #3A261B\" class=\"text-color\">Composition en acides gras<\/span><\/h3>\n<\/section>\n\n<section class=\"section section--gutenberg section--gutenberg-nomargin wp-block-paragraph\">\n<p>La digestibilit\u00e9 des mati\u00e8res grasses par les porcelets est nettement influenc\u00e9e par la source de mati\u00e8res grasses utilis\u00e9e (voir Tableau). Par ailleurs, cet effet est d\u2019autant plus important que les animaux sont jeunes. L\u2019efficacit\u00e9 de la digestion des mati\u00e8res grasses d\u00e9pend de deux facteurs : la longueur de la cha\u00eene des acides gras et le rapport entre les acides gras insatur\u00e9s et satur\u00e9s. Les acides gras \u00e0 cha\u00eene courte et moyenne sont beaucoup plus faciles \u00e0 dig\u00e9rer et \u00e0 absorber que les acides gras \u00e0 cha\u00eene longue. La graisse de coco, par exemple, contient une grande quantit\u00e9 d\u2019acides gras \u00e0 cha\u00eene moyenne. Par cons\u00e9quent, surtout chez les jeunes porcelets, la graisse de coco est clairement plus digeste que les autres sources de mati\u00e8res grasses. Les acides gras insatur\u00e9s sont \u00e9galement plus faciles \u00e0 dig\u00e9rer, car ils se transforment plus facilement en micelles que les graisses satur\u00e9es. Les graisses oxyd\u00e9es ont \u00e9galement un effet n\u00e9gatif sur la digestibilit\u00e9. Une bonne mati\u00e8re grasse contient donc moins de 5-10 % d\u2019acides gras libres, contient peu de radicaux et est pr\u00e9serv\u00e9e du rancissement. Par cons\u00e9quent, il est conseill\u00e9 d\u2019analyser les mati\u00e8res grasses en fonction de param\u00e8tres de rancissement tels que la teneur en peroxyde, les acides gras libres, l\u2019indice de p-anisidine\u2026<\/p>\n<\/section>\n\n<section class=\"section section--gutenberg section--gutenberg-nomargin wp-block-heading\">\n<h3 class=\"wp-block-heading\"><span style=\"color: #3A261B\" class=\"text-color\">\u00c2ge de l\u2019animal<\/span><\/h3>\n<\/section>\n\n<section class=\"section section--gutenberg section--gutenberg-nomargin wp-block-paragraph\">\n<p>Au moment du sevrage, le syst\u00e8me gastro-intestinal des porcelets n\u2019est pas encore totalement d\u00e9velopp\u00e9. \u00c0 ce stade, le niveau de production des sels biliaires est tr\u00e8s bas. Par cons\u00e9quent, les sels biliaires ne sont pas suffisamment pr\u00e9sents pour \u00e9mulsionner les mati\u00e8res grasses fournies et les transformer en micelles. Toutes les mati\u00e8res grasses ne sont donc pas dig\u00e9r\u00e9es dans l\u2019intestin gr\u00eale. En particulier chez les porcelets sevr\u00e9s jeunes, le niveau de digestion des mati\u00e8res grasses est encore faible (Tableau).<\/p>\n<\/section>\n\n<section class=\"section section--gutenberg section--gutenberg-nomargin wp-block-heading\">\n<h2 class=\"wp-block-heading\"><span style=\"color: #DBB154\" class=\"text-color\"><strong>Conclusion<\/strong><\/span><\/h2>\n<\/section>\n\n<section class=\"section section--gutenberg section--gutenberg-nomargin wp-block-paragraph\">\n<p>Les mati\u00e8res grasses fournissent une part importante de l\u2019\u00e9nergie disponible dans l\u2019alimentation des porcelets, et il est donc important de rendre la digestion des graisses aussi optimale que possible. \u00c0 cet effet, Nuscience utilise dans les prestarters Babi et les concentr\u00e9s Vitastart de la graisse de coco, qui est nettement plus digeste chez les jeunes porcelets que les autres sources de mati\u00e8res grasses.
